1. To anchor or fasten something in place, as with bolts. A noun or pronoun can be used between "bolt" and "down." We need to bolt down the shed before the big storm. If that panel keeps popping up, we're going to need to bolt it down.
2. To eat something quickly. A noun or pronoun can be used between "bolt" and "down." He bolted down his dinner because he was already late for the airport. Savor it a little, will you? Don't just bolt it down!
